Question- with pasta, you suggest draining cooked pasta, retain a cup of pasta water, mix pasta with sauce and add water from cup to emulsify.
I have always lifted pasta from pot with tongs, shake, shake and dropped into pasta – pasta still retains some water- is this wrong??!!
