Finally – a cookbook!
This is real – a RecipeTin cookbook is happening! I’m committed – I can’t back out, I’ve signed a publishing contract with Pan Macmillan, a big name publishing house here in Australia.
Excited, nervous, daunted, scared…. all these words come to mind as I sit here, preparing myself for what will be the the most important and biggest project I have ever undertaken in my professional life.
Which brings me to the main purpose of sharing this news….
I want to make this cookbook WITH you, FOR you!
Let’s fill these pages with recipes YOU want! Mostly new, but even some favourites from the website!

I’m going to be completely honest with you. I am under no illusion about how much work it will take to make a cookbook.
So for me to make this cookbook for myself, because, well, you know, it is kind of an ego boost to see your name on a printed book. That’s not enough motivation for me. I don’t deserve it! 😂
If, on the other hand, I make it for you…….. now THAT is what I call motivation. That gets me excited. That is what will give me the incentive to give this cookbook everything I’ve got, to make it the best it can be.
I want to make a cookbook that you will actually use all the time, rather than gathering dust on the bookshelf.
So tell me what you want in our cookbook! What type of recipes, even little details like adding nutrition information, storage and make ahead tips, or key dietary notes (like gluten free).
They will mostly be new recipes that are exclusively made for the cookbook though I will also include some long standing reader favourites from the website!

Life of Dozer
I know today’s big announcement is all about me, me, me. But that’s no excuse to skip a Dozer update! Here he is, disrespecting my cookbook already. Or possibly just thinks the photo is real food. It could be either. 🙄

Though he has already expressed he is willing and able to help in any way possible with the cookbook. Thanks Dozer! We all know what your “help” involves….

Really comprehensive index, maybe one for ingredients so look up the ingredient and a list of of recopies using each one.
I’d love to see a section on dinners that can be on the table in 20 mins. Also I love your recipe notes saying what you can use as substitutes or what can be left out in a pinch. I’d love to see more notes on gluten free dairy free substitutes.

Please, please include your ‘Arabian Feast’ recipes, that is a fantastic recipe set and it’s part of my rotation.

This is BIG.
So hard to choose as love all of your recipes but my favorite would have to be your Asian inspired recipes. I always have a jar of “Charlie Sauce” in my fridge and I’ve learned to “Velvet” my chicken/meat. Your Chicken Stir Fry Chop Suey is the recipe that helped me to discover I could turn out a decent tasting Asian dish without relying on takeaways to satisfy my love of Asian food hence I’d love to see an Asian food section. Hopefully this will be available to purchase in NZ

Could we please have more vegan recipes?
Even though we are vegetarian, we follow your recipes because you have a way of building deep flavor into your dishes.
I would love to see your take on specific Vegetarian and Vegan meals, especially without dairy.
And a lot of the can use meat free subs Jeanette! N x
Congratulations, Nagi! This!! I started using your recipes when I still ate meat. Have continued to use your recipes as a vegan (some adaptions to some of my old favorites) because I love how you layer flavors. Please include vegetarian/vegan recipes in your book. And just as you add notes for dietary restrictions like gluten you can do the same with notes for adapting to vegan/vegetarian.
I would love to see your Thanksgiving Turkey with maple glaze recipe- it was the first recipe of your I ever tried and I was in love! I’ve been a huge fan ever since! congratulations and cant wait!

From Alberta, Canada, where we are going back to “enhanced public health measures” 🙄. Life is “interesting” right now.
Anyway, I’m so thrilled by your announcement. I cannot wait. But I will have to. Thinking outside the box… What would I like to see? A companion book for homemade dog food, specifically for aging Retrievers. You have one, a Golden, and I have two, Labradors. The best food is homemade. Raw from a processing plant isn’t great and it’s expensive made yourself. There are all kinds of things to add to deal with weight gain, arthritis, pain, etc. Health advice from one dog owner to another but not veterinary advice (invariably kibble). Anyway… Just a “way out there” thought probably. My girls (aged 11 and 9 human years) have recently been slimmed down as a result of me concocting a breakfast more like my British grandparents fed their Lab (and before him, their Golden) but healthier (a super porridge). Throw in a few raw lamb bones every week and Pacific fish-based kibble for dinner. They are happier, healthier and not stealing food any longer (mainly carbs). But they need variety. It’s the spice of life for Retrievers. Just my two cents’ worth (not that either of our countries uses pennies any longer!).
Thank you so much for making the Herculean effort to write us a book containing things we want. For humans, anything you’ve posted, hopefully lower carb and sugar, higher fibre, would be awesome. And sell it in Canada please.

I’m full of ideas, some good some bad. I’m also a published author in the sciences and engineering (hence outside the box thinking 😉 ! ). Glad I could spark an idea in you. Would honestly love a chapter on feeding a Dozer type of dog.
Publish two books at the same time. All your old, cherished recipes AND your new ones. I’d buy both as soon as they’re published. Love it! My best idea all year😉

Nagi’s Kitchens of the World – The Real Joy of Cooking! Not asking for too much, just All things Tex Mex; Indian; Thai; Vietnamese; Rice & Pasta; Italian; Soups & Salads; Breads; American; Malaysian; Aussie; European; Chinese; Sandwiches; Chocolate; Japanese; Seafood; Basic kitchen tools; Pantry stables; and the kitchen sink! The only thing you can go easy on are the lentils. This book needs to be big, colorful and lay flat on the counter…and, oh yeah, signed by you & Dozer.

Not joking, Nagi ! A chapter on Dozer and healthy dog food with Dozer ‘doing’ say 100 pawprints over a week . . . would sell for a big price . . . which could be used for meals for the disadvantaged !
I have plenty of cookbooks based on cuisine, e.g., Asian Food, Indian Vegetarian, Grilling, etc. I also love The Food Lab which is great for the science of cooking. What I don’t have is a book for my many eating moods. Some days I want Street Food, others I want flavorful vegetarian, some days call for meat and others pasta.
What I would like to see I a cookbook which I can reference based on my food mood. Each section would be organized by how I want to eat and cook that day. For example Street Food would have recipes from all over the world like Asian Chicken, Peruvian Tigers Milk Ceviche (killer), Birria Tacos, Buttermilk Fried Chicken Sliders, etc.
For me the key is great international recipes that I want to discover.
Also, pictures, pictures, pictures!

Congratulations! How exciting for you and us. Your recipes are my favourites, they’re the ones I cook all the time.
Your instructions, tips, subs for ingredients and the little extra details you give are what make them work for me. Please continue this in your book.
Please also provide grams and mls to all the recipes. As you know cup sizes vary, there’s no second guessing if the amounts are correct when cooking and baking with grams and mls.
Recipe wise, all the beef short rib ones, no knead bread, sticky wings, quick chicken tacos. I have stopped buying store bought sauces thanks to your many noodle/stir fry recipes. So maybe a section for them. Regardless of what is in the book it will be fantastic. Best wishes with the journey ahead.

So excited about the cookbook news! All the recipes of yours I have tried have been terrific. With that in mind, what I would love is a combination of things – recipes a tired person can fix after a tough day of work that can feed the family, one pot meals (that can feed the family), dishes that work well in a slow cooker, things you can make ahead and freeze, dishes that are good to bring to a potluck, and some dishes for a celebration. (i don’t ask for much do I? 🙂 )
I would also love if you could include a checklist of pantry staples (similar to the post for surviving covid lockdown). That would just h help with the weekly shop knowing “if I have these things I should be able to fix something for dinner even if I have not planned out the weekly meals.”
I think you did a series once which had a main dish (like a roast) and then other recipes you could make from leftovers. Tips like that would be helpful too (e.g. with the leftovers, try these recipes…”)
Also tips on which recipes freeze well or can be made ahead.
