With a gorgeous golden brown crust and almost an entire head of broccoli in them, it’s hard to believe these Chicken Patties are BAKED, not fried! Once you start eating these, it’s hard to stop – they are just so, so good.

These are like the chicken and broccoli version of good ole’ Rissoles! Serve this for dinner with crusty bread slathered with butter and a side salad. Or put out a platter with a dipping sauce as a starter to share!

Fritters? Or patties? I couldn’t decide. And I kept flopping back and forth so you’ll probably see them used interchangeably throughout this post – and even the video (which I just realised I made with FRITTERS plastered all over it. 😂)

These are a variation of the ever popular Baked Broccoli Cheese Balls. When it comes to patties, I know it’s easy to automatically reach for the fry pan and oil. And to get a truly beautiful golden crust on patties – and fritters for that matter – you need a decent amount of oil. And it needs to be topped up.

And you need to stand there, frying batch after batch – I’d probably cook this in 3 batches. And you need to keep the cooked batches warm.

Scratch all that.

Bake ’em! They come out so golden and crispy!

Hidden broccoli – an entire head!

The chicken patties recipe calls for 2 cups of chopped broccoli. I know that doesn’t sound like very much but you’ll be surprised – it’s almost an entire head of broccoli. Once it’s soft cooked, chopped up, one whole head is about 2 cups. Jam packed, mind you!

Though having said that, these chicken patties can definitely take more broccoli – or other shredded veggies for that matter.

Think – carrots, grated onion, corn, grated zucchini (squeeze the excess liquid out in a dishtowel or paper towels), peas, finely sliced cabbage, even finely chopped green beans and asparagus. I’ve added notes in the recipe for how to do this.

And as for the CHEESE…

Well, you can’t call these cheesy patties without a good amount of CHEESE in them! It’s up to you how much you want to use.

How to serve Chicken Patties

  • As a meal – with crusty bread and a side salad

  • As a starter to share – pile onto a platter with a dipping sauce

  • Burgers – Make bigger ones and use for BURGERS!

  • Chicken Meatballs – Form meatballs instead of patties, and cook per recipe

As for a dipping sauce, ketchup / Aussie tomato sauce, plain yoghurt or sour cream are all great. But if you want to make a bit more of an effort, try the healthier Yogurt Ranch Dipping Sauce provided in the recipe! – Nagi x

Recipe video above. It's hard to believe these fritters made with chicken mince are BAKED not FRIED! With almost an entire head of broccoli in them, these are juicy, cheesy and so irresistible. This makes 15 fritters about 6 cm / 2.25" wide, 1cm / 2/5" thick. Trying making burgers or meatballs!

Ingredients

Fritters:

  • 500 g / 1 lb chicken mince (ground chicken) , or turkey or pork (Note 1)
  • 1 garlic clove, minced
  • 1 egg
  • ¾ cup panko breadcrumbs
  • 2 packed cups broccoli , soft cooked & finely chopped (1 head)(Note 2)
  • ¾ cup finely chopped shallots
  • 1 1/2 – 2 cups shredded mozzarella (or other cheese of choice)
  • 3/4 tsp salt (reduce to 1/2 tsp if using a flavoured cheese)(Note 3)
  • Black pepper

Cooking:

  • Oil spray

Yoghurt Ranch Sauce (optional):

  • 2/3 cup plain yoghurt
  • 1/8 tsp EACH dried dill, parsley and chives
  • ¼ tsp onion powder
  • ½ garlic clove, minced
  • 1 – 2 tsp extra virgin olive oil
  • Squeeze of lemon juice, optional
Prevent screen from sleeping

Instructions

  • Preheat oven to 200C/390F. Line a baking tray with baking paper (or spray with oil).
  • Place Fritter ingredients in a bowl, mix to combine.
  • Measure out about ¼ cup of mixture and pat into fritter shapes about 6 cm / 2.25″ wide, 1cm / 2/5″ thick (they shrink a bit and become thicker).
  • Place on tray. Spray the top (generously) with oil.
  • Bake for 15 minutes, flip, spray with oil again then bake for a further 8 – 10 minutes until golden on top. Serve immediately with Sauce.
  • Sauce: Mix ingredients together. Add salt and pepper to taste. Set aside for 20+ minutes.

Recipe Notes:

1. Chicken mince (ground chicken) sold at supermarkets can be very wet. Always look for packets that doesn’t have water in them (also indicates that it’s not very fresh).
2. Broccoli – You will need about 1 medium head of broccoli, florets only. Cook using your preferred method until soft – I boil or steam. Then chop finely – see recipe video. You can use the thick stem if you want – peel the outside before cooking, once cooked, chop it very finely.
3. Mozzarella cheese doesn’t have much salt in it. It stretches beautifully and that’s what I used in the photos and video. You can use any cheese you want. BUT if you use a flavoured cheese like cheddar, colby, tasty etc, reduce the salt slightly.
4. MORE VEGGIES: This recipe can take about 1.5 cups of extra veggies. Suggestions: grated carrot or onion, grated zucchini with excess water squeezed out, corn, peas, finely sliced veggies like cabbage and spinach, finely chopped cooked green beans or asparagus.
5. Nutrition per serving assuming 4 servings, excludes sauce. Recipe makes about 15 fritters.

    Your recipe calls for shallots but did not use it on the video. Scallions are on the video instead. I want to make this today, I bought shallots as listed on the recipe ingredients. Can I use 3/4 cup of shallots? It sounds like a LOT. How much should I use? Hope to hear from you.

    Can I substitute frozen chopped broccoli? Do I cook the parties before freezing? Is the meat cooked before adding to the broccoli?

    Hi, Nagi!

    I want to try this recipe tonight, it looks so delicious and easy 😀 I’m defrosting the minced chicken now. I’m just wondering if it’s wet, can I strain it with a sieve that has small holes, or do you recommend another method to get the liquid out? Also, I don’t have broccoli at the moment, just corn, canned beans, and kale lol. Would fresh kale do if I chop it up finely?

      Hi Sally! I would pat handfuls with paper towels 🙂 If you need to, just add a bit more breadcrumbs, or refrigerate the mixture to firm it up. Kale would be TERRIFIC in this!

    MMMMMM so delicious Nagi.
    Ok Ok not enough days in the week to keep your recipes on high rotation. We made this for dinner had 4 patties with salad and froze the rest (meals to look forward to). We added some extra shredded onion and it made 17 good sized patties.
    Shared on my page and the normal rave endorsement.

    Quick question… do you think you could freeze them? I would love to let make them and freeze them up but not sure on the cheese…?

    These are amazing! I made them a couple weeks ago with ground chicken. Tonight I am trying them with ground turkey, my husband was skeptical but was quite I,pressed and even my four year old ate several of them. He loves broccoli!

      you can try chia or flax seeds mixed with a few tablespoons of water, set aside to thicken naturally. Makes a good binding agent. We can’t do eggs either.

    These look amazing! I will definitely be trying these. I find I like many veggies IN things rather than on the side. Not making this tonight though. Tonight I’m baking some chicken cordon bleu (previously fried). I bake my potato cakes, fried chicken, my zucchini fries, regular steak fries, etc. All are crispy and delicious, a fraction of the fat when baked, not fried, and no splatter or grease to clean up! Yea!

    Looks great, gonna give these a go tonight!

    Just quickly, the written recipe calls for shallots but you use scallions in the video? Are these interchangeable or is it intended for green/spring onions/scallions?

    Also what is the intended 231g serving size? Is that 3 patties?

      Hi Josh! Scallions are also known as shallots and green onions 🙂 The nutrition assumes 4 servings for the whole recipe so around 3.5 (because the recipe makes 13 – 15 fritters!). N x
